Redskin Apple Puffins

200gm apple
125ml vegetable oil
1 egg
110gm sugar
150gm pancake flour or 150gm plain flour
1 tsp bicarbonate of soda (pls add, if use plain flour)
1 tsp ground cinnamon powder
26ml fresh apple juice
  1. Preheat the microwave oven or oven to moderate hot 200-210C
  2. use medium size silicon muffin baking cups cake or grease 12 hole muffin pan or line up muffin pans with paper-lined foil muffin cases
  3. halve unpeeled red apple, remove and discard cores; chop into 1cm pieces. Beat oil and sugar in medium bowl with electric mixer until combined.
  4. Add egg, beating until thick
  5. Stir in sifted dry ingredients, apple and juice; divide mixture among muffin cases.
  6. Bake in moderately hot oven about 25 minutes.
  7. Turn into wire rack; serve warm or cold
