- Preheat the microwave oven or oven to moderate hot 200-210C
- use medium size silicon muffin baking cups cake or grease 12 hole muffin pan or line up muffin pans with paper-lined foil muffin cases
- halve unpeeled red apple, remove and discard cores; chop into 1cm pieces. Beat oil and sugar in medium bowl with electric mixer until combined.
- Add egg, beating until thick
- Stir in sifted dry ingredients, apple and juice; divide mixture among muffin cases.
- Bake in moderately hot oven about 25 minutes.
- Turn into wire rack; serve warm or cold
