Cheddar Corn Muffins

1 cup fresh sweet corn
1 cup pancake flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup milk
1/2 cup shredded cheddar cheese
1/4 cup vegetable oil
1 egg

Heat microwave oven or oven to 180C. grease muffins baking tray or line medium size muffin cups with paper baking cups. Mix all of the ingredients. Beat strongly 1 minute with whisks or electric mixer until just combined. Divide batter evenly among muffin cups. Bake about 15 minutes or until golden brown.
