Homemade Garam Masala

ingredients
4 tbsp coriander seeds
3 tbsp cardamon pods
2 tbsp cumin seeds
1 tbsp fennel seeds
1 tbsp whole black peppercorns
1 tsp whole clovers
3 cinnamon sticks

Preparations
In a pan and dry-fry over moderate heat until fragrant. Open the cardamon pods, retaining the seeds only. Put the fried spices in a food processor or blender with a grated whole fresh nutmeg seed and process to a powder. Used immediately or store in an airtight jar.
